Chicken Caprese is a flavorful Italian-inspired meal that combines juicy chicken breasts with mozzarella cheese, cherry tomatoes and basil. Its marinated with Italian seasoning that gives it a very flavorful taste. It goes well with sparkling water and lemon that gives it a refreshing and non-alcoholic option.
- 3 chicken breasts
- 2 tbsp. cooking oil
- 1 tbsp. honey
- 1 tbsp. Balsamic vinegar
- Salt to taste
- 1 tsp. white pepper powder
- 1 tbsp. Italian seasoning
- 1 tbsp. Italian vinegar
- 200 g mozzarella cheese
- 10 cherry tomatoes
- 1 handful basil leaves basil
- 1 tsp. garlic cloves crushed
How To Prepare Chicken Capresa
- Put the balsamic, Italian seasoning, two teaspoons olive oil, honey and salt in a small bowl and mix well.
- Put the chicken pieces on a plate and smear with the marinade until the chicken is well coated.
- Cover the bowl with the chicken and marinate for about 2 hours.
- Cut the mozzarella cheese into slices and the cherry tomatoes into half.
- Put a skillet on medium heat and let it heat up, sauté the garlic for 1 minute add the chicken pieces on the hot skillet and cook on both sides for about 6 to 8 minutes or until well cooked and no longer pink.
- Place the tomatoes and cheese slices on top of the chicken breasts, cover the skillet with a lid and let the cheese melt on low heat for about 3 to 4 minutes.
- Garnish with basil leaves and serve while still hot with pasta, rice or mixed salad.
