Botan Ebi is a shrimp that is more flavorful than other kinds of shrimp and is mainly produced in Japan. Mainly, Botan Ebi is served alongside its head in a tempura batter which makes it more flavorful and fresh. 

Of all the kinds of Botan ebi, the best kind of this shrimp is found mainly in Hokkaido. This shrimp is very delicious with a sweet flavor and amazing texture that can be served with any recipe of your liking.

What is Botan Ebi?

Botan ebi is a kind of shrimp that is more flavorful than most kinds of shrimp which is found mainly in Hokkaido or in Toyama Bay on the west side of Honshu. This kind of shrimp lives in the shallow waters of cold seas and when the temperature of the water gets higher, they dive deeper into the water. However, they are becoming scarce in Japan so they are imported from mainly Alaska and Russia.

The best kind is harvested from the cold waters of Hokkaido and that’s where they taste the best.

What does Botanebi (Botan shrimp) taste like?

Botan ebi has a distinct sweet flavor compared to all other kinds of shrimp on the market. The best kind to eat is the one that has been fished recently, between 10 to 15 hours since that’s when its the sweetest it taste. It is typically served raw just like nigiri and the flesh should be firm with no black spots on the head. This shrimp can also be served together with a bluish-green roe which is placed on top of sushi.

How to prepare

  • Wash the shrimp and cut off the head from the entire body.
  • Remove the shell using kitchen scissors and you can prepare it however you wish.
  • Serve and enjoy.
