Using a grater, shred 1/2 cup of carrots in a clean bowl. Dice up 1/2 cup of onions and set aside. Crack 2 eggs and whisk in a separate bowl/

Place a pan on medium heat and add 1 tablespoon of olive oil. Add in the grated carrots and onions and let them saute for 3 minutes. Add in salt and pepper to taste.

Pour in the egg mixture and spread it evenly so that the eggs cover the carrots and onions.

Cook for 3 to 4 minutes or until the surface and edges of the omelette are firm. Fold the omelette on itself and serve it on a plate.
