  • One onion diced
  • 1 tsp Chopped garlic
  • 2 eggs
  • Salt
  • Pepper
  • 1 teaspoon olive oil
  • 1/3 cup shredded cooked chicken
  • 2 tablespoons shredded cheese

How to make cheesy chicken omelette recipe

  • Add oil to a pan over medium to low heat.
  • Add the chopped garlic and onions into the pan and let it fry for 2 to 3 minutes.
  • Add the shredded cooked chicken and saute for 5 to 7 minutes and transfer it to a plate.
  • In a large mixing bowl, beat in the eggs, salt and pepper.
  • Whisk until fully incorporated.
  • Place the pan used to cook the chicken on the burner and add in the egg mixture.
  • Cook until the top of the omelette is softly set and add the chicken with onions and garlic on top.
  • Add grated cheese on top, fold the omelette in half and let it cook for a few minutes and then remove.
  • Serve on a plate and enjoy.

Storage

Storing: If you have any leftovers, store in an airtight container in the fridge for upto 3 days.

To reheat, place in the microwave or in a non stick pan and enjoy.

Tips

  • Do not add milk to the eggs because its going to make the omelette watered down and thin.
  • Use any cheese that you prefer
  • If you do not have left over chicken, but a cooked rotisserie chicken and shred it off the bone.
  • Make sure that before you add the chicken, the egg is fully set at the bottom.
