Healthy lemon slice no bake method
Ingredients for Lemon Slice Base
All you need to make healthy lemon slice no bake method is;
- Almond Flour
- Melted Coconut Oil
- Desiccated Coconut
- Quick Oats
- Maple Syrup
- Lemon Juice
- Lemon Zest
- Vanilla Extract
- Salt
Healthier version of lemon icing:
- Cashew Coconut Butter /coconut butter, cashew butter
- Maple Syrup
- Lemon Essence
- Lemon Juice
- Coconut Oil
Instructions on How to make Healthy Lemon Slice No Bake Method
Lemon Slice Base
- Place a baking tin with parchment paper and greese with butter.
- Place the almond meal, oats and desiccated coconut in a food processor and blend until its well combined and looks like flour.
- Then add the lemon juice, vanilla extract, lemon zest, maple syrup, coconut oil and salt into the mixture.
- Blend until it forms into a sticky mixture that holds well when pressed by the hands.
- Pour the filling into the lined tin/pan and press firmly to make the mixture compact into the tin.
- Place the tin into the freezer for 10- 15 minutes so that the mixture firms up.
Healthy Lemon Icing
- In a mixing bowl, add all the lemon icing ingredients; coconut cashew butter, lemon essence, lemon juice, coconut oil and maple syrup.
- Mix all the ingredients until it forms a smooth icing.
- By now, the lemon slice base should be ready, so remove it from the freezer and pour this icing mixture on top and spread evenly.
- Place the tin back into the freezer for about 15 minutes to firm up the icing.
How to Serve
After the icing has firmed up in the freezer, transfer the tin to the fridge for up to two hours and that’s when you can slice it up.
Use the pieces of parchment paper that are hanging on the side to pull out the healthy lemon slices from the tin.
How to Store
You can store healthy lemon slice no bake pieces in the fridge in an airtight container for up to 5 days.
Alternatively, you can place them in the freezer in ziplock bags for up to 4 weeks.

Traditionally, healthy lemon slices are usually no bake but for a more refined taste and texture, you can try out this healthy vegan lemon slice baked version.
Ingredients
- Butter or Coconut oil
- Honey or maple syrup
- Lemon zest
- Whole meal flour
- Rolled oats
- Desiccated coconut
Lemon Icing
- Butter
- Lemon juice
- Maple syrup or honey
- Tapioca flour
- Desiccated coconut
Instructions on how to make healthy lemon slices baked method
- Preheat your oven to 180°C.
- Melt your butter in the microwave.
- In a food processor add rolled oats, whole meal flour, desiccated coconut and combine until it forms a fine flour.
- Then add in the wet ingredients; maple syrup, melted butter and lemon zest.
- Mix until well combined and forms and moist dough consistency.
- Add the mixture to a buttered tin and bake for 10 minutes.
- Let it cool in the counter for 15 minutes and then place in the fridge to cool further for 30 minutes.
Lemon Icing
- In a bowl, add all the lemon icing ingredients; butter, maple syrup, lemon juice and desiccated coconut.
- Mix all the ingredients together until it forms a smooth icing consistency.
- Remove the baked lemon base from the fridge and spread the icing on top.
- Place the mixture back in the freezer for 15 minutes and remove the healthy lemon slice form the tin and cut it up into smaller pieces.
- Enjoy.
