Lecho is a thick Hungarian stew mostly made with bell peppers, tomatoes and onions. This is a popular meal served usually at festivals. There are multiple versions of this Lecho recipe made with sausage, meat or zucchini.

Ingredients

  • 3 large tomatoes diced
  • 1 red bell pepper diced
  • 3 sausages, sliced into big chunks
  • 1 yellow and green bell peppers diced
  • 2 onions roughly chopped
  • 3 garlic cloves minced
  • 3 tablespoons oil
  • 1 teaspoon paprika 
  • ½ teaspoon  salt

How to make lecho

Step 1: Sautė the onions and garlic in oil over medium high heat. Add in the sausage and cook for about 5 minutes. 

Step 2: Cook the bell peppers in a pan for 10 minutes over low heat.

Step 3: Add all the other ingredients and cook for 10 minutes or until the peppers are tender.

Step 4: Serve and enjoy!

Serving tips

This lecho can be enjoyed on its own but you can also serve with rice or pasta. Garnish with fresh green onions before eating.

How to store

Store any leftover lecho in an airtight container for up to 5 days in the fridge or up to 2 months in the freezer.

Variations

Lecho is highly customizable and you can add in or remove any ingredient you want to match your taste. Some examples include:
