Ripe banana cake with almonds
Description
This is an extremely delicious cake full of nutrients all combined in a cake. Its made with over ripe bananas but you can use normal ripe bananas. It is enhanced with chopped almonds that give it that crunchy texture.

Cream the butter and sugar together until fluffy.

Beat in the eggs one at a time as you whisk the mixture.

Fold in the mashed bananas until evenly mixed, then add the chopped almonds and cinnamon powder and fold in ensuring the mixture is well combined.

Spoon the batter into a well-greased baking tray with a parchment paper well laid on the tin.

Put in the oven preheated to 170 degrees or gas mark 3. Bake for 35 to 40 minutes or until firm.

Note
In this recipe, i used overripe bananas that i had in my pantry. You can use ordinary ripe bananas as well. You can use different nuts like hazelnuts, brazil nuts, cashew nuts or unsalted pistachios in place of almonds.
