Place the 2 ounces of chicken in a dry bowl. Mix the blue cheese, cream cheese and buffalo sauce in a bowl and heat it while stirring until the mixture is smooth.

Whisk 2 eggs in a bowl and then place a frying pan over medium heat and add 1 tablespoon of Olive oil. Pour in the eggs and cook for 1 minute and then add the chicken and cook for another 3 to 4 minutes. Fold the omelette and place it on a plate. Drizzle the buffalo sauce with cheese on top.
