What salmon should you use?
For this recipe you can use any kind of salmon. The taste and flavor will still the same as long as you follow the recipe instructions. The best cut of salmon to use for this candied smoked salmon is the strip from the belly. However, you can still use any other cut like regular fillet strips.
Ingredients
- 1 pound of salmon
The honey marinate
- 1/2 cup of honey
- 1 cup brown sugar
- 1/4 cup sea or kosher salt
- 5 tbsp water
You can also add maple syrup but make sure to reduce the amount of honey you use.
How to make smoked salmon candy
- Get your salmon and rinse them with water and slice them into cubes.
- Soak the salmon cubes in a mixture of honey, water and salt. This will infuse the flavor into the fish.
- Then smoke the salmon over low heat until golden brown.

Yes, you can marinate the salmon for less than 8 hours and actually you can marinate the salmon for even 1 hour less.
Smoked Salmon Candy Recipe
- Rinse the salmon under cold running water and pat dry.
- Slice the salmon into cubes and place in a bowl and add the honey marinate and cover with foil and put in the fridge for 8 hours.
- After the salmon has marinated for 8 hours, remove from the mixture. Rinse the salmon with water and pat dry with a paper towel. Do not discard the marinate as you will use it later.
- Let the salmon air dry over the counter for about 30 minutes while you preheat your smoker to 225°F.
- Drizzle oil over the salmon before adding it to smoker and smoke the salmon for 1 hour or until the temperature reaches 140°F. Make sure to brush the salmon with the marinate to get a glaze on the salmon.
- Serve and enjoy
