This is a flavorful, floral and tasty Za’atar Hummus recipe that makes a perfect dip or side dish. This is an amazing hummus recipe made with chickpeas, tahini, lemon, garlic and Za’atar.

Za’atar is a Middle Eastern spice/herbal mixture consisting of salt, oregano, sumac, sesame seeds and thyme. Za’atar has numerous health benefits such as helping to protect cells from damage and more.

Equipment you will need

Food processor– to mix all the ingredients to make a smooth hummus consistency.

  • chickpeas – you can used canned chickpeas or dried ones.
  • tahini – tahini is ground sesame seeds and adds loads of flavor to this hummus recipe.
  • lemon juice – zest from fresh and juicy lemons.
  • olive oil 
  • garlic cloves– crashed garlic cloves
  • water – to smoothen the hummus if the mixture gets too thick
  • salt – to taste

Za’atar Hummus

  • 3 teaspoons za’atar spice mix
  • 11/2 cup of chickpeas rinsed and drained 
  • 1 tablespoon olive oil 
  • 3 cloves garlic, crashed
  • 1/2 lemon zest juice
  • 3 tablespoons tahini
  • 2 tablespoons of water or aquafaba 
  • ½ teaspoon  salt to taste

Instructions

  1. In a pan, heat the za’atar and crashed garlic in oil for a few seconds to release the flavor.
  2. Add all the ingredients into the blender, reserving a bit of the oil used while heating the garlic for later. Blend until you get a smooth hummus consistency. Add water if it gets too thick.
  3. Serve and drizzle the reserved oil.

How to serve

This Za’atar hummus can be enjoyed in as many ways as you would like, for example;

  • as a dip for paratha or crackers
  • spread for bread or buns

Substitutions

  • Chickpeas – use beans instead of chickpeas.

Tricks and tips for the best truffle hummus

  1. If you are not using canned chickpea, here is how to cook dried chickpea from the beginning.
  2. In a boiling pot, add the chickpeas and water to cover the chickpeas completely and bring this to a boil.
  3. Boil until the skin on the chickpea starts falling off and is soft.
  4. Drain the chickpea through a strainer and run cold water over them for 1 minute
  5. Add baking soda to the chickpea while boiling. This is going to make the chickpea soften a lot quicker and make them easier to digest.
