Ingredients

  • 1 tablespoon olive oil
  • 2 sausages (Italian or your favorite type), sliced or crumbled

  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 cup dry lentils (green or brown), rinsed
  • 1 can (400g) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon cumin
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Cook the sausage: In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned, about 5 minutes. Remove and set aside.
  2. Sauté the veggies: In the same pot, add onion, garlic, carrot, and celery. Cook for about 4–5 minutes, until softened.
  3. Add everything else: Stir in the lentils, diced tomatoes, broth, and spices. Bring to a boil, then reduce heat to low.
  4. Simmer: Let it simmer uncovered for 30–35 minutes, or until lentils are tender. Stir occasionally and add a splash of water if it gets too thick.
  5. Add sausage back in: Return the cooked sausage to the pot, stir, and simmer for another 5 minutes.
  6. Serve: Ladle into bowls, garnish with parsley, and enjoy warm!
