3 apples, cubed
3 carrots, peeled and grated
150 g Cranberries
200 g cashew nuts (roasted)
3 tbsp. olive oil
2 tbsp. apple cider vinegar
Salt to taste

- In a bowl, combine the spinach, cranberries, carrots, apple cubes and cashew nuts.
- In a mixing jar, whisk together the olive oil, apple cider vinegar, salt and black pepper, and mix together until well mixed.
- Pour the dressing over the salad and toss well until everything is well coated.
