350 g short pasta shapes (egg riccioli)

1 cup edamame, shelled

1 tsp. light soy sauce

120 g watercress, chopped

1 white onion, sliced

1 green bell pepper, cubed

50 g sesame seeds

3 carrots grated

For The Dressing

3 tbsp. olive oil

2 tbsp. white wine vinegar

2 tbsp. Organic honey

2 garlic cloves crushed

1/2 tsp. black pepper powder

How To Prepare Edamame And Watercress With Pasta Salad

  1. Cook the pasta in a sauce pan of salted water according to the packet instructions boil until tender. Drain and put aside to cool.
  2. In a another sauce pan, boil the edamame in salted water for about 10 minutes or until tender, then drain and put aside to cool.
  3. In a large bowl, combine the pasta, edamame, green bell pepper, onion, carrots, watercress, light soy sauce and sesame seeds.
  4. Combine the dressing ingredients in a whisking jar and whisk until well combined.
  5. Pour the dressing over the salad mixture and toss to coat all the ingredients evenly.
  6. Put the salad in a platter and serve immediately or you can chill and serve it cool.

350 g pasta (short pasta of your choice)

1 cup edamame shelled

5 sherry tomatoes

2 cucumbers, diced

2 red onions, sliced

150 g feta cheese, grated

Small handful fresh basil chopped

2 tbsp. olive oil

1 lemon juice extracted

1 tbsp. Dijon mustard

1 clove garlic crushed

Salt to taste

Black pepper powder to taste

  1. Bring a sauce pan with salted water to boil. Add the pasta and cook for about 10 minutes or tender. Drain and put aside to cool.
  2. In a different sauce pan, boil the edamame in salted water for about 15 minute or until cooked, drain and put aside to cool.
  3. In a large bowl, add the pasta, edamame, sherry tomatoes, cucumber, onion ,cheese and basil.
  4. In a jar, mix together the lemon juice, olive oil, Dijon mustard, garlic, salt and black pepper and whisk till well combined.
  5. Pour the dressing on the salad and toss to combine all the ingredients together. Put the salad onto a platter and serve immediately or chill for 20 minutes before serving.
