350 g short pasta shapes (egg riccioli)
1 cup edamame, shelled
1 tsp. light soy sauce
120 g watercress, chopped
1 white onion, sliced
1 green bell pepper, cubed
50 g sesame seeds
3 carrots grated
For The Dressing
3 tbsp. olive oil
2 tbsp. white wine vinegar
2 tbsp. Organic honey
2 garlic cloves crushed
1/2 tsp. black pepper powder
How To Prepare Edamame And Watercress With Pasta Salad
- Cook the pasta in a sauce pan of salted water according to the packet instructions boil until tender. Drain and put aside to cool.
- In a another sauce pan, boil the edamame in salted water for about 10 minutes or until tender, then drain and put aside to cool.
- In a large bowl, combine the pasta, edamame, green bell pepper, onion, carrots, watercress, light soy sauce and sesame seeds.
- Combine the dressing ingredients in a whisking jar and whisk until well combined.
- Pour the dressing over the salad mixture and toss to coat all the ingredients evenly.
- Put the salad in a platter and serve immediately or you can chill and serve it cool.

1 cup edamame shelled
5 sherry tomatoes
2 cucumbers, diced
2 red onions, sliced
150 g feta cheese, grated

2 tbsp. olive oil
1 lemon juice extracted
1 tbsp. Dijon mustard
1 clove garlic crushed
Salt to taste
Black pepper powder to taste

- Bring a sauce pan with salted water to boil. Add the pasta and cook for about 10 minutes or tender. Drain and put aside to cool.
- In a different sauce pan, boil the edamame in salted water for about 15 minute or until cooked, drain and put aside to cool.
- In a large bowl, add the pasta, edamame, sherry tomatoes, cucumber, onion ,cheese and basil.
- In a jar, mix together the lemon juice, olive oil, Dijon mustard, garlic, salt and black pepper and whisk till well combined.
- Pour the dressing on the salad and toss to combine all the ingredients together. Put the salad onto a platter and serve immediately or chill for 20 minutes before serving.
