  1. Mix the coriander, cumin, crushed cardamom seeds, turmeric, black pepper and cinnamon with the yoghurt and season well.
  2. Pour over the chicken breasts, ensuring they are well coated, then cover and chill. Leave to marinate for 2 hours or overnight.
  3. Boil the quinoa in slightly salted water for about 15 minutes until well cooked. Put aside to cool.
  4. Boil the brown rice in a different sauce pan for about 30 minutes on low heat until cooked through. Put aside to cool.
  5. In a Mixing bowl, mix together the quinoa, rice, oil, garam masala, tomatoes, carrots, onions, coriander, rocket leaves salt, lemon juice and black pepper, combine well and put in a serving platter.
  6. Heat the oven to 200 degrees centigrade. Transfer the marinated chicken to a baking tray and cook for 25 to 30 minutes, or until the breasts are cooked through and the spice crust has turned golden.
