INGREDIENTS

Serves 2

  • 100g almonds, chopped
  • 100g peas, blanched
  • 2 tbsp. lemon juice
  • 70g watercress
  • 1 avocado, peeled, stoned and sliced
  • Salt
  • Black pepper

For the dressing

  • 2 spring onions, chopped
  • ½ lemon juice
  • 2 tbsp. mayonnaise
  • Small bunch of chives, snipped
  • Small bunch of basil, leaves chopped
  • 2-3 tbsp. water
  • Salt
  • Black pepper powder    

PREPARATION METHOD

  1. Spread the almonds on a baking try, sprinkle some salt and put in a pre-heated oven for 10 to 15 minutes at 350 degrees.
  2. Whizz all the dressing ingredients, except water and seasoning, to a puree in a small food processor or blender. Add the water to loosen into a drizzling consistency.
  3. Transfer the almonds to a bowl and toss with the peas, avocado, water cress, lemon juice and seasoning.
  4. Drizzle over the dressing, and serve.

2. Lettuce With Raisins Alkaline Salad

INGREDIENTS

  • 1 Broccoli head, cut into small florets
  • 100g kale, shredded and stalk removed
  • 100g chard, shredded and stalks removed
  • 150g raisins
  • 1 bunch of spring onions, shredded

  • 2 tbsp. flaked almonds, toasted
  • Salt
  • Black pepper

Dressing

  • 2 tbsp. olive oil

PREPARATION METHOD

  1. Soak the raisins in warm water for about 20 minutes to soften them.
  2. Blanch the broccoli in lightly salted boiling water for 3 minutes then rinse and drain well.
  3. Add the broccoli, chard, kale, spring onions and chilli to the raisins.
  4. Pour the dressing into a bowl with the vegetables mixture, season generously and toss together. Leave for 5 minutes then toss again and serve scattered with the flaked almonds.

3. Spring Onion With Butterhead Alkaline Salad

  • 16 spring onions, trimmed
  • Olive oil, for brushing
  • ½ cup quinoa
  • 1 butter head lettuce, leaves separated
  • 200g mixed radishes, halved
  • 4-6 cooked beetroot, quartered
  • 1 punnet of salad cress
  • Salt
  • Black pepper

For the salad dressing

  • 3 tbsp. white wine vinegar
  • ½ tsp. English mustard
  • 4 tsp. olive oil

Preparation method

Soak the quinoa for 15 minutes and then drain off the water.

  1.  Put a cup of water into a pan and add the quinoa and bring to a boil. Cover and simmer for 15-20 minutes or until the water is absorbed and cooked.
  2. Add the vinegar, mustard, olive oil, salt and pepper into a jar and close tightly. Shake until well combined.
  3. Put the quinoa, lettuce, spring onions, radishes, beetroots and cress into a bowl, sprinkle the dressing over the mixture and mix well.
  4. Serve as desired.
