Ingredients for making Baked Potato Pizza
350 g potatoes
2 large onions, peeled and thinly sliced
200 ml olive oil
small bunch of thyme leaves
250 g mozzarella cheese
200 ml sour cream
100 g parmesan cheese
For the base
200 g whole meal flour
400 g plain flour
1 tsp. salt
10 g dried yeast
2 tbsp. milk
4 tbsp. olive oil
How to prepare Baked Potato Pizza
For the base
- Mix the flours together in a large bowl, then add the salt, yeast, milk, olive oil and 200 ml warm water, adding more water or flour if needed to give a firm dough.
- Knead on a flat surface for ten minutes. If you have a a mixer with a dough hook, use that instead. Cover and set aside for 30 minutes in an oiled bowl.
- Slice the potatoes into thin slices, wash them and put in a sauce pan and boil in salted water for 5 minutes. Drain thoroughly.
- In sauce pan, fry the onions in oil till soft.
- Put a large baking sheet in an oven preheated to 200 degrees. Turn the dough out, flatten it and cut it into half. Press each piece with your fist into a round roughly 25 cm in diameter. Leave to rise in a warm place for five minutes.
- Divide the onion, potatoes, thyme, cheese and sour cream between the bases.
- Slide the pizzas on to the heated baking sheet, drizzle with a little more oil and scatter with shavings of parmesan, then bake for 20 minutes, till the bases are crisp.
