Ingredients For Making Broccoli Pepper Frittata

400 g broccoli, thoroughly washed and halved

2 tbs. oil

4 Red peppers

1 tsp. red chilli flakes

8 eggs, beaten

200 ml whole milk

Small bunch of basil leaves

Salt to taste

1/4 tsp Black pepper powder

How to prepare Broccoli Pepper Frittata

  1. Turn on the flame of a gas stove on medium, using tongs, place chillies directly over the flame until the skin is charred and blistered, turning occasionally for about 2 to 3 minutes.
  2. In a sauce pan, boil some water and blanch the broccoli for 4 minutes and then drain the water.
  3. Heat the oil in an frying pan, then add the chilli flakes, peppers and broccoli and fry for 4 minutes.
  4. Whisk the eggs and milk together and season well, then add the egg mixture, pulling in the sides with a wooden spoon until the edges start to set. Scatter over the basil, and put the pan under a hot grill for 5 minutes until puffed up, golden brown and the eggs have set. You can serve with a salad of your choice.
