  • 1/4 head of cabbage, cut into matchstick (julienne) slices
  • 5 medium potatoes, cubed
  • 3 carrots, shredded
  • 3 eggs
  • 200 ml milk
  • 100 g cheddar cheese, grated
  • 1 large onion, sliced into rings
  • 1 tbsp cooking oil
  • 1 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/4 tsp white pepper
  • Salt to taste

  1. Prepare the Veggies
    Peel and cube the potatoes. Shred the carrots as well as the cabbage. Slice the onion into rings. Boil or sauté the cubed potatoes until just tender. In a large pan, heat the oil and lightly sauté the onions until soft. Add the cabbage and carrots, cooking just until wilted. Add all spices and mix well.
  2. Make the Egg Mixture
    In a bowl, whisk together the eggs, milk, white pepper, and a pinch of salt.
  3. Combine
    In a large pan, heat the oil and lightly sauté the onions until soft. Add the potatoes and spices and let this cook until the potatoes are halfway done. Add the cabbage then let this cook for a while then add your carrots and capsicum then let this cook for a few minutes.

    Put the cooked vegetables and potato mixture in a baking dish. Pour the egg mixture evenly over the top. Sprinkle with grated cheddar cheese. Bake in a preheated oven at 180°C (350°F) for about 25–30 minutes, or until the eggs are set and the top is golden brown.
