Cheesy Quesadillas are a delicious Mexican meal made by filling tortillas with cheese and different vegetables of your choice, such as bell peppers, corn, jalapenos, yoghurt and any other ingredients of your choice.
Cheesy Quesadillas are melty and stretchy that are a comfort meal. They are a meal idea for picky eaters and also a quick meal idea, You can use whole wheat or corn tortillas for more fiber.

Ingredients For Making Cheesy Quesadillas
- 250 g Boneless chicken, cut into cubes
- 4 tortilla wraps
- 200 g grated mozzarella cheese
- 2 cups yogurt
- 1/4 cup sweet corn
- 2 Tomatoes chopped
- 2 large white onions, chopped into cubes
- 1 tsp. salt
- 1 tsp. cayenne pepper powder
- 1 tsp. garlic powder
- 2 tbsp. cooking oil
- 1 tsp. cumin powder
- 1 tsp. paprika powder
- 1/2 tsp. black pepper powder
- 1 large green bell pepper
- 2 tbsp. lemon juice
- 2 tbsp. olive oil
How To Prepare Cheesy Quesadillas
- Put the chicken cubes into a bowl, add the yogurt, cayenne pepper, paprika powder, cumin powder, garlic powder and lemon juice. Mix well, wrap the bowl with cling foil and marinate for about 3 hours.
- After marinating the chicken, put a sauce pan on medium heat, add cooking oil then add the chicken and cook on medium heat, cover and cook for 10 minutes.
- Add the cubed bell pepper, onions, corn, chopped tomatoes and cook for 2 minutes. Turn off the heat and put aside.
- Divide all the ingredients into four, that will be put on the four tortillas.
- Lay the tortillas on a plate, spread some cheese on half of the tortilla, then spread the chicken mixture, spread some more cheese on top of the chicken mixture, then fold the tortilla.
- Put a griddle on medium heat and heat it up, then put the tortilla on the griddle and toast the tortilla on both sides.
