Ingredients For Making Chicken Caesar Pasta Salad

  • 250 g pasta (penne)
  • 2 chicken breasts (skin removed)
  • 1/2 tsp, garlic powder
  • 1/2 tsp. paprika powder
  • 1/2 tsp. black pepper powder
  • 1 tbsp. cooking oil
  • 1 small bunch chopped romaine lettuce
  • 1/2 cup cherry tomatoes
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup of croutons

Ingredients For The Dressing

  • 200 ml mayonnaise
  • 1 tsp. Dijon mustard
  • 1 tsp. lemon juice
  • 2 garlic cloves crushed
  • 50 g Parmesan cheese
  • 1 tsp. Worcestershire sauce
  • 1 tsp. salt or to taste
  • 1/2 tsp. black pepper powder

How To Prepare Chicken Caesar Pasta Salad

  1. Put a sauce pan on medium heat and boil 500 ml water, add the pasta and cook until al dente, drain, rinse lightly under cold running water, then set aside.
  2. Put the chicken breasts in a bowl, season with salt, pepper, garlic powder, paprika and olive oil. Put on a medium heated grill and grill each side for about 8 minutes, then turn and grill other side for another 8 minutes. Cook until well cooked and golden in color with no juices coming out.
  3. Cut the chicken into cubes and set aside to cool.
  4. Take a mixing bowl, add the mayonnaise, Dijon mustard, lemon juice, garlic, Parmesan, Worcestershire, salt and pepper.
  5. Take a large bowl, add the pasta, chicken cubes, romaine lettuce, cherry tomatoes and Parmesan, add the dressing and toss the salad to combine everything together.
  6. Add the Parmesan, black pepper, put in the fridge and chill for about 30 minutes, top up with the croutons and serve immediately while the croutons are still crispy.
