Ingredients For Making Chicken Caesar Pasta Salad
- 250 g pasta (penne)
- 2 chicken breasts (skin removed)
- 1/2 tsp, garlic powder
- 1/2 tsp. paprika powder
- 1/2 tsp. black pepper powder
- 1 tbsp. cooking oil
- 1 small bunch chopped romaine lettuce
- 1/2 cup cherry tomatoes
- 1/2 cup grated Parmesan cheese
- 1/2 cup of croutons
Ingredients For The Dressing
- 200 ml mayonnaise
- 1 tsp. Dijon mustard
- 1 tsp. lemon juice
- 2 garlic cloves crushed
- 50 g Parmesan cheese
- 1 tsp. Worcestershire sauce
- 1 tsp. salt or to taste
- 1/2 tsp. black pepper powder
How To Prepare Chicken Caesar Pasta Salad
- Put a sauce pan on medium heat and boil 500 ml water, add the pasta and cook until al dente, drain, rinse lightly under cold running water, then set aside.
- Put the chicken breasts in a bowl, season with salt, pepper, garlic powder, paprika and olive oil. Put on a medium heated grill and grill each side for about 8 minutes, then turn and grill other side for another 8 minutes. Cook until well cooked and golden in color with no juices coming out.
- Cut the chicken into cubes and set aside to cool.
- Take a mixing bowl, add the mayonnaise, Dijon mustard, lemon juice, garlic, Parmesan, Worcestershire, salt and pepper.
- Take a large bowl, add the pasta, chicken cubes, romaine lettuce, cherry tomatoes and Parmesan, add the dressing and toss the salad to combine everything together.
- Add the Parmesan, black pepper, put in the fridge and chill for about 30 minutes, top up with the croutons and serve immediately while the croutons are still crispy.
