Ingredients For Making Coconut Chicken Curry

  • 10 chicken thighs
  • 2 large onions
  • 2 tomatoes tomatoes chopped
  • 1 tbsp. tomato paste
  • 3 tbsp. Olive oil
  • 4 garlic cloves
  • 2 cm ginger, peeled and crushed
  • 2 tsp. paprika powder
  • 500 ml coconut milk
  • 300 ml chicken broth
  • 1 tsp. salt (or to taste)
  • 2 tsp. mixed spices
  • 1 small coriander for garnishing
  • 1 lemon wedge for serving

How To Prepare Coconut Chicken Curry

  1. Put the chicken pieces into a bowl, add the salt and white pepper and rub the chicken pieces all over.
  2. Take a skillet and add the cooking oil, heat it on medium heat and sear the chicken pieces for about 4 to 5 minutes per side until browned and put aside.
  3. Add some oil if it is less in the sauce pan and heat it up, add the onions and sauté for 4 to 5 minutes or until the onions are soft and golden in color.
  4. Add the garlic and ginger and cook for 40 seconds or until they become fragrant. Add the tomatoes paste, mixed spices, paprika, chopped tomatoes and cook until thick.
  5. Add the coconut milk and chicken broth, stir, cover and simmer for 20 to 25 minutes, on medium heat, add the lemon juice on the cooked curry and stir before serving.
  6. This amazing creamy coconut chicken curry will go well with fried rice or any other side dish of your choice.
