- 200g pasta
- 2 heads of sweet corn
- 1 red onion, sliced
- 1 yellow capsicum, washed, seeds removed and cut into wedges
For the dressing
- 1 cantaloupe melon, chopped
- 150g roasted sesame seeds
- 3 tbsp. coriander, chopped
- Salt
- Black pepper to taste
PREPARATION METHOD FOR THE DRESSING
Blend the cantaloupe melon to a smooth puree in a blender.
Add the remaining dressing ingredients and mix well, refrigerate till required.
