Ingredients For Making Egg Chow Mein

For The Eggs

  • 4 eggs
  • 1/2 tsp. Turmeric powder
  • 1 tsp. paprika powder
  • 1 tsp. garlic powder
  • Salt to taste
  • 1 Tbsp. butter

For The Noodles

  • 150 g Noodles or long spaghetti

For The Vegetables

  • 1 tbsp. Cooking oil
  • 1 onion cut into cubes
  • 5 cloves garlic cut into slices
  • 2 medium carrots cut into julienne slices
  • 1/4 small cabbage cut into julienne slices
  • 1 large green bell pepper cut into julienne
  • 1 tbsp. soy sauce
  • 1 tbsp.. Oyster sauce
  • Small bunch spring onions cut into small slices

How To Make Egg Chow Mein

  1. Take a mixing bowl and crack the eggs one by one, add the turmeric, paprika powder, salt, garlic powder and salt. Whisk until well combined.
  2. Put a non stick frying pan on heat and add 1 tablespoon of butter, cook the eggs by gently stirring them until they are cooked.
  3. Boil water in a cooking pot, add the noodles and boil then according to the packets instructions.
  4. Take another non stick pan big enough to fit all the ingredients, put on medium heat and add cooking oil, add the onions and cook them until they are soft, add the garlic slices and cook then for about 2 minutes, making sure that they don’t burn.
  5. Add the carrots and cook them for 3 minutes, then add the cabbage and cook for 2 minutes then add the green bell peppers, add the paprika powder and black vinegar, stir well to combine and cook for 5 minutes.
  6. Add the noodles and eggs, add the soy sauce and oyster sauce and spring onions, mix well and let simmer for about 3 minutes.
  7. Serve while still hot.
