Egg Fried Rice is a meal that has its origin in China. It was made in order to make use of the left over rice and other ingredients from the previous meals. They then decided to add eggs and seasonings to make the plain rice more flavorful.

Ingredients For Making Egg Fried Rice

  • 2 cups rice (cooked and cooled)
  • 3 eggs
  • 2 Carrots, washed peeled and cubed
  • 1 cup corn (boiled)
  • 1 large red onion, finely chopped
  • 1/2 cup green peas (boiled)
  • 2 medium carrots, washed, peeled and cubed
  • 1 tbsp. garlic (minced)
  • 1 tbsp. ginger (crushed)
  • 1 tsp. Turmeric powder
  • 1 tsp. Curry powder
  • 1/2 tsp. Salt
  • 1/2 tsp. White pepper powder
  • 1 small bunch green onions(chopped)
  • 2 tbsp. Soy sauce
  • 2 tbsp. Cooking oil

How To Prepare Egg Fried Rice

  1. Take a mixing bowl, add the eggs, add a pinch of salt and 1/4 teaspoon of white pepper powder and beat to mix well.
  2. Put a sauce pan on medium heat, add 1 tablespoon of cooking oil, let it heat up then add the egg mixture and scramble the eggs until just set. Remove from heat and set aside.
  3. Add the rest of the cooking oil into the sauce pan, add the garlic, ginger and chopped onions, sauté until fragrant and slightly golden in color.
  4. Add the corn, carrots and peas, stir fry for 3 to 4 minutes, tossing them until evenly cooked.
  5. Add the cooked rice and scrambled eggs to the vegetable mixture. mix well to combine evenly.
  6. Pour in the soy sauce, salt, pepper, curry powder, turmeric powder,1/4 teaspoon white pepper powder. Mix everything evenly and cook for another 3 to 4 minutes. Sprinkle the chopped green onions and serve while still hot.
