- 1 tsp ground cinnamon
- Butter or oil for frying

Instructions:
- In a bowl, whisk together eggs, pumpkin puree, milk, vanilla, pumpkin pie spice, brown sugar, and cinnamon.
- Heat a skillet with butter over medium heat.
- Dip each bread slice into the pumpkin custard mixture, coating both sides.
- Cook until golden brown on each side, about 2–3 minutes per side.
- Serve warm with maple syrup and a dusting of cinnamon.
2. Apple Pumpkin Streusel Muffins
Ingredients:
- 1 ½ cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- 1 cup pumpkin puree
- ½ cup sugar
- ¼ cup brown sugar
- 2 large eggs
- ½ cup vegetable oil (or melted butter)
- 1 cup diced apples
Streusel Topping:
- ½ cup flour
- ¼ cup brown sugar
- ¼ cup butter, cold and cubed
- ½ tsp cinnamon
Instructions:
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, mix flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk pumpkin puree, sugars, eggs, and oil.
- Combine wet and dry ingredients, then fold in diced apples.
- Spoon batter into muffin liners, filling ¾ full.
- In a small bowl, mix streusel topping ingredients until crumbly. Sprinkle over muffins.
- Bake 18–20 minutes, or until a toothpick comes out clean.
3. Pumpkin Cinnamon Roll
Ingredients (Dough):
- 3 cups all-purpose flour
- 2 ¼ tsp instant yeast
- ½ cup warm milk
- ½ cup pumpkin puree
- ¼ cup sugar
- ¼ cup melted butter
- 1 egg
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
Filling:
- ½ cup brown sugar
- 2 tsp cinnamon
- 2 tbsp melted butter
Frosting:
- 4 oz cream cheese, softened
- 2 tbsp butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla
Instructions:
- In a mixing bowl, combine warm milk, yeast, and sugar. Let sit until foamy (5 minutes).
- Add pumpkin puree, melted butter, egg, spices, and salt. Stir in flour gradually until a dough forms.
- Knead 6–8 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.
- Roll dough into a rectangle, brush with melted butter, and sprinkle brown sugar + cinnamon.
- Roll tightly and cut into slices. Place in a greased baking dish. Cover and let rise 30 minutes.
- Bake at 350°F (175°C) for 20–25 minutes.
- Beat frosting ingredients together, then spread over warm rolls.
4. Mini Pumpkin Bread with Cinnamon Swirl
Ingredients:
- 1 ¾ cups flour
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- 1 cup pumpkin puree
- ½ cup sugar
- ½ cup brown sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
Cinnamon Swirl:
- ¼ cup sugar
- 1 tbsp cinnamon
Instructions:

- Place apple filling in the center, fold dough over, and pinch edges.
- Place seam-side down in dish, sprinkle with cinnamon and brown sugar.

Ingredients (Bread):
- 1 ½ cups flour
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- 1 cup pumpkin puree
- ½ cup sugar
- ½ cup brown sugar
- ½ cup oil
- 2 large eggs
- 1 tsp vanilla
Cream Cheese Filling:
- 8 oz cream cheese, softened
- ¼ cup sugar
