- 250 g gluten-free baking flour ( must have xanthan gum or guar gum as an ingredient)
- 3 zucchini, grated and squeezed to remove all the water
- 2 eggs
- 180g castor sugar
- 2 tbsp. honey
- 150 ml olive oil
- 1 tsp. vanilla essence
- 200 ml almond milk
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. baking powder
- 1/2 tsp. cinnamon powder
- 1/2 tsp. nutmeg powder
- 2 tbsp. raisins
How To Prepare Gluten-Free Zucchini Muffins
- Pre-heat the oven to 350 degrees, then take muffin tins with paper liners and grease lightly.
- Grate the zucchini and squeeze out extra moisture with a clean towel or paper towel. Take a mixing bowl whisk together the gluten free baking flour, baking soda, baking powder, salt, cinnamon and nutmeg powder.
- Take another bowl, add the eggs, sugar, honey, oil, vanilla and milk, whisk together until well mixed. Combine the wet ingredients and dry ingredients, fold in the grated zucchini, add the raisins and fold then in.
- Take a scoop and scoop some batter and add into the muffin cups, put about 3/4 full. Put in the pre-heated oven and bake for 20 minutes or until a tooth pick inserted in the muffins comes out clean. Cool the muffins on a cooling rack for about 15 minutes, then serve them with a cup of tea, iced coffee or even a smoothie of your choice.
