Ingredients for making Greek Chicken Salad

1 large boneless chicken breast cut widthwise into thin slices

3 large onions cut into square pieces

100 g feta cheese

2 red capsicums sliced

1 green capsicum sliced

2 yellow capsicums sliced

1 cucumber

1/2 cup sliced black olives

4 tomatoes sliced

For The Dressing

300 ml yogurt

2 tsp. mustard powder

3 tbsp. lemon juice

2 tbsp. grated lemon rind

4 flakes garlic, crushed

Salt to taste

1/2 tsp. black pepper powder

How to Prepare Greek Chicken Salad

  1. Boil 4 cups of water with some salt and 1 teaspoon lemon juice. Add the chicken strips and boil for 15 minutes or until the chicken turns tender. Remove from water and set aside.
  2. Peel the cucumber and cut lengthwise into halves. Using the back of a teaspoon, remove the seeds from the cucumber by pulling the spoon straight down the length of the cucumber half.
  3. Cut the cucumber into 1/4 inch thick, half-moon slices.
  4. For the dressing, mix yogurt, mustard, lemon juice, rind, garlic, mint, salt and pepper. Taste and adjust the seasonings to your taste.
  5. In a serving bowl, mix chicken and cucumber with the rest of the ingredients, spoon the dressing over and toss lightly to serve.
