Ingredients For Making Grilled Mango Pineapple Chicken
- 4 boneless, skinned chicken breasts
- 1 cup cooking oil
- 1 ripe mango, washed, peeled and chopped
- 1 cup pineapple chunks
- 1 small piece of jalapeno
- 1 tsp. Cayenne pepper
- 3 garlic cloves, crushed
- 1 tbsp. organic honey
- 2 tbsp. soy sauce
- 50 ml lime juice
- Small handful cilantro
- 4 wedges of lime
1 tsp. salt
How To Prepare Grilled Mango Pineapple Chicken
- Take a blender and add the pineapple cubes, mango cubes, soy sauce, honey, lime juice, olive oil, cayenne pepper, jalapeno, salt and garlic. Blend until smooth.
- Put the chicken pieces in a bowl and add the marinade and coat the chicken pieces evenly with the marinade. Put in the refrigerator for about 3 hours or overnight for enhanced flavor.
- Pre-heat the grill to medium heat, meanwhile remove the chicken from the marinade and grill for 8 to 10 minutes each side, basting occasionally with the marinade.
- Grill the chicken until the chicken is no longer pink on the inside. Grill the pineapple slices for 3 to 4 minutes per side until lightly charred on both sides.
- Serve the chicken with a side dish of rice, roasted veggies or salad of your choice.
