Ingredients For Making Mango Sago Pudding
- 2 mangoes (ripe) one cubed for topping and one for blending
- 500 ml water
- 1/3 cup tapioca pearls
- 1 cup coconut milk
- 3/4 cup condensed milk
- 1 tbsp. evaporated milk for drizzling
- 1/2 tsp. vanilla essence
- 1/4 tsp. salt
- 1 small handful mint leaves
How To Prepare Mango Sago Pudding
- Put a sauce pan on medium heat, add 500 ml of water and bring to boil, add the sago and cook for about 10 to 15 minutes, stirring all the time.
- When the pearls turn translucent, turn off the heat, cover and set aside for 10 minutes. Rinse under running water to remove the excess starch and set aside.
- Put one of the cubed mangoes in a blender and blend to a smooth puree, add the coconut milk and blend again.
- Add the condensed milk, vanilla and the salt, the thickness should be creamy and not very thick, adjust accordingly by adding some condensed milk.
- Add the sago and put in the fridge to chill for at least 2 hours, serve in small bowls or glasses, top with the cubed mangoes, garnish with mint leaves and a drizzle of condensed milk.
