- Cook the pearl barley or spelt for 20-25 minutes, or according to the packet instructions, in lightly salted boiling water until tender. Drain well and tip it into a bowl.
- Meanwhile, blanch the broccoli in lightly salted boiling water for 3 minutes then rinse and drain well. Do the same with the chard, kale, mustard and edamame.
- Add the blanched vegetables, spring onions and chilli to the barley or spelt.
