- 1 Whole chicken (wash in water mixed with white vinegar to remove fishy smell)
- 5 large potatoes (peeled and cubed)
- 4 large carrots cut into (Rondell) shapes
- 1 egg
- 4 garlic cloves crushed
- 2 tsp Butter
- 3 tsp paprika
- 3 tsp oregano
- 3 tsp thyme
- 1 tsp black pepper
- 3 tbsp. olive oil
- 4 slices fresh Bread crumbs
- 4 sticks rosemary leaves
- 1 red or white onion chopped
- 1 small bunch spring onions chopped

1. Prepare the Chicken
Begin by washing the whole chicken in a mixture of water and white vinegar to eliminate any residual odors. Pat it dry with a clean towel.
2. Seasoning Blend
In a bowl, combine the paprika, oregano, thyme, black pepper, and olive oil. Mix well to create a marinade.
3. Marinate the Chicken
Rub the seasoning blend generously over the chicken, ensuring it’s well-coated. Let it marinate for at least 30 minutes to allow the flavors to penetrate.
4. Prepare the Vegetables
While the chicken marinates, prepare the vegetables. Peel and cube the potatoes, slice the carrots into rondelle shapes, chop the onion, and slice the spring onions.
5. Preheat the Oven
Preheat your oven to 180°C (350°F).
6. Assemble the Dish
In a roasting pan, arrange the marinated chicken in the center. Surround it with the prepared potatoes, carrots, chopped onion, and spring onions. Dot the vegetables with small pieces of butter and sprinkle the fresh rosemary leaves over the top.
7. Bake
Place the roasting pan in the preheated oven and bake for 1 hour, or until the chicken is cooked through and the vegetables are tender.
8. Prepare the Bread Crumbs
While the chicken is baking, toast the bread slices until golden brown. Once toasted, crush them into breadcrumbs.
9. Serve
Once the chicken and vegetables are done, remove from the oven. Sprinkle the toasted breadcrumbs over the top for added crunch and flavor. Serve hot and enjoy!
