Ingredients
175 g red cabbage, washed thoroughly and shredded
50 g kale, thoroughly washed and shredded
2 red apples, washed, cored and coarsely grated
2 carrots, coarsely grated
Topping
2 tbs. pumpkin seeds
2 tbs. sunflower seeds
2 tbs. flaked almonds
1/2 tsp garam masala
1/2 tsp. ground turmeric
1 tbs. olive oil
Dressing
150g natural yogurt
1 tsp. garam masala
1/2 tsp. ground turmeric
salt to taste
pepper to taste
How to prepare Red Cabbage Salad
- To make the topping, heat a frying pan over medium heat. Put the pumpkin seeds, sunflower seeds, almonds, garam masala and turmeric in the hot pan and add the oil. Cook for 3-4 minutes, string frequently, until the almonds are golden-brown. Remove from the heat and leave to cool.
- Meanwhile, to make the dressing, put the yogurt, garam masala and turmeric in a large bowl, then season to taste with salt and pepper, and stir well.
- Add the cabbage, kale, apple and carrot to the bowl and gently toss. Divide the salad between four bowls, sprinkle over the topping and serve.
