How to make Red Cabbage Salad

Ingredients

175 g red cabbage, washed thoroughly and shredded

50 g kale, thoroughly washed and shredded

2 red apples, washed, cored and coarsely grated

2 carrots, coarsely grated

Topping

2 tbs. pumpkin seeds

2 tbs. sunflower seeds

2 tbs. flaked almonds

1/2 tsp garam masala

1/2 tsp. ground turmeric

1 tbs. olive oil

Dressing

150g natural yogurt

1 tsp. garam masala

1/2 tsp. ground turmeric

salt to taste

pepper to taste

How to prepare Red Cabbage Salad
  1. To make the topping, heat a frying pan over medium heat. Put the pumpkin seeds, sunflower seeds, almonds, garam masala and turmeric in the hot pan and add the oil. Cook for 3-4 minutes, string frequently, until the almonds are golden-brown. Remove from the heat and leave to cool.
  2. Meanwhile, to make the dressing, put the yogurt, garam masala and turmeric in a large bowl, then season to taste with salt and pepper, and stir well.
  3. Add the cabbage, kale, apple and carrot to the bowl and gently toss. Divide the salad between four bowls, sprinkle over the topping and serve.
