Sausage And Potato Soup is one of my most favorite soups that i enjoy taking during a cold rainy season. It is warming and comforting seeming to encourage me all the time. The potatoes and sausages give a balanced flavour that pairs well together.
The potatoes release the starch that thickens the soup naturally making it velvety in texture and creamy. You can add curry powder, beef chops to enhance its taste. It is really nice for weeknights, rainy-season or even for meal-pre containers.

:Ingredients For Making Sausage And Potato Soup
- 300 g sausages of your choice, cubed
- 5 large potatoes, peeled and diced
- 2 carrots, peeled and diced
- 1 onion, chopped
- 3 garlic cloves
- 250 g cup mushrooms
- 300 ml chicken broth 300 ml milk
- 1 tbsp. butter
- 1 tbsp. cooking oil
- 1 tsp. smoked paprika
- 1 sp. oregano
- 1 tsp. thyme
- 1/2 tsp. salt or to taste
- 1/4 tsp. black pepper powder
- 1 small bunch spring onions, chopped
How To Prepare Sausage Potato Soup
- Put a sauce pan on medium heat, add the cooking oil, add the sausages and cook until browned and crispy, remove from the heat and set aside.
- Using the same sauce pan, add the butter and onions, sauté until soft, then add the garlic, cook for 20 seconds, add oregano, thyme, salt, black pepper and paprika, cook for 5 seconds turning to avoid sticking to the pan, then add the carrots and mushrooms, sauté for about 3 minutes.
- Add the potatoes and then the chicken broth. Let it simmer for for 15 minutes or until the potatoes are cooked. Add the sausages to the potato mixture and then the milk, stir well and simmer for 3 minutes.
- Sprinkle the spring onions and serve while still hot.
