Ingredient Used In Sizzled Chilli Shrimps

500 g shelled shrimps

1 bunch of spring onions, chopped

5 tbsp. soy sauce

5 tbsp. dry sherry

3 dried red chilies, seeded and chopped

3 garlic cloves, crushed

2 cm ginger crushed

6 tbsp. water

100 g salted cashew nuts

3 tbsp. vegetable oil

2 tsp. corn flour

How To Prepare Sizzled Chilli Shrimps

  1. Mix the soy sauce with the sherry, chillies, garlic, ginger and water in a large bowl.
  2. Add the shrimps, spring onions and cashew nuts and mix well. Cover tightly and leave to marinate for 3 hours, stirring occasionally.
  3. Heat the oil in a sauce pan. Drain the shrimps, spring onions and cashew nuts from the marinade with a slotted spoon and add to the pan, reserving the marinade.
  4. Stir-fry over a high heat for 2 to 3 minutes.
  5. Mix the reserved marinade with the corn flour, add to the pan and stir-fry for 40 seconds until the marinade forms a slightly thickened shiny glaze over the shrimp mixture. Serve the shrimps immediately, with rice or any other starch of your choice.
