- 2 carrots, chopped
- 2 cups crushed tomatoes
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes
- ¾ cup grated parmesan cheese
- 2 tablespoons chopped parsley
Instructions
Preheat the oven to 160°C (325°F).
Pat the beef roast dry with paper towels, then season it with salt, black pepper, and garlic powder.
Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast for a few minutes on each side until browned well. Remove the roast and set aside.
In the same pot, add the onion and carrots. Cook for a few minutes until softened, then stir in the garlic and cook for another 30 seconds.
Add tomato paste and stir for about a minute before pouring in the crushed tomatoes and beef broth.
Stir in Italian seasoning and red pepper flakes.
Return the roast to the pot and spoon some of the sauce over the top.
Cover with a lid and transfer to the oven. Cook for about 3 to 3½ hours or until the beef becomes very tender.
Remove the roast from the oven and stir parmesan cheese into the sauce until melted.
Top with chopped parsley before serving.

Tips For Tomato Parmesan Pot Roast
Searing the roast properly at the beginning adds a lot more flavor to the final sauce, so it’s worth taking a few extra minutes for that step.
Fresh parmesan works much better than the powdered kind because it melts smoothly into the sauce instead of becoming grainy.
If the sauce gets too thick while cooking, add a little extra beef broth near the end.
The roast slices easier after resting for a few minutes before serving, although sometimes I just shred it directly into the sauce instead.
