Vegetable Crepes are an amazing versatile healthy dish that is enjoyed as a savory or sweet meal, depending on the ingredients and toppings used.

Vegetable Crepes are great source of vitamins and minerals, particularly when you use a variety of colorful vegetables.

These crepes are very healthy and make a quick, healthy and simple breakfast idea. They can also make a side dish as desired.

Traditional crepes batter is made with flour, eggs, milk, salt and butter or oil. In this recipe, am using carrots, spring onions and grated carrots.

Ingredients For Making Vegetable Crepes

  • 1 cup All purpose Wheat Flour
  • 3 Eggs
  • 300 ml Milk
  • 1/2 tsp. Salt
  • 1/4 tsp. black pepper
  • 2 tbsp. Sugar
  • 1 tbsp. Butter
  • 2 Carrots peeled and grated
  • 1/2 Yellow Bell Pepper finely chopped
  • Small bunch Spring Onions thinly chopped
  • 1 tbsp. Cooking oil

How To Prepare Vegetable Crepes

  1. Beat the eggs in a bowl until well beaten, add the milk and continue whisking.
  2. Add salt, butter and sugar and continue whisking.
  3. Sieve the wheat flour and add into the egg mixture and continue whisking until there are no more lumps.
  4. Add the grated carrot, chopped onions and chopped bell pepper, mix well.
  5. Put a pan in a cooker and heat on medium. Add cooking oil and brush the pan evenly.
  6. Scoop 1/2 cup of the mixture into the pan and spread well. Cook on low heat until the under is well cooked.
  7. Turn onto the under side and let it cook well.
  8. Serve while still hot. This makes a healthy and quick breakfast.
