Ingredients For Making Vegetable Egg Rolls

  • 5 egg roll wrappers (store bought or home made) about 15 by 15 cm
  • 1 egg beaten for sealing
  • 2 carrots, grated
  • 1/4 cabbage, shredded
  • 1 small bunch green onions, chopped
  • 3 garlic cloves crushed
  • 1 tsp. sesame oil
  • 1 1/2 tbsp. soy sauce
  • 1/2 tsp. black pepper powder
  • 2 cm ginger crushed
  • 1 tsp. oyster sauce
  • 1/2 tsp. salt
  • 500 ml deep frying cooking oil

How To Prepare Vegetable Egg Rolls

  1. Put a sauce pan on medium heat, add 1 tablespoon oil, add the garlic and ginger and sauté until fragrant. Add the cabbage, carrots and green onions.
  2. Stir for 4 minutes or until they are slightly soft, add soy sauce, oyster sauce, sesame oil, salt and black pepper. Cook the vegetables until all the water is dry, then remove from heat and put aside to cool.
  3. Take the wrappers and lay them corner facing you, add 3 tablespoons of the filling, then fold the bottom corner up over the filling. Fold in the left and right sides roll tightly towards the top. Brush the top corner with egg and seal.
  4. Put a sauce pan on heat, add the deep frying oil and heat it up for about 8 minutes or until a wooden skewer inserted bubbles up.
  5. Deep the rolls one by one and fry for about 4 minute, then turn to cook on the other side, cook until golden brown.
  6. The vegetable egg rolls go well with garlic, honey and soy sauce or any other sauce of your choice.
