How to Make Biscoff Butter Brownies
Preheat your oven to 320°F (160°C). Line your baking pan with parchment paper, leaving an overhang on two sides for easy lifting later. This is a non-negotiable step for perfect, clean cuts.
Put your Biscoff cookies at the bottom of the pan and set aside, arrange them to cover the bottom well.
In a large, microwave-safe bowl, melt the butter. Whisk in the granulated sugar until combined. Add the eggs and vanilla extract, and whisk vigorously for 1-2 minutes until the mixture is well-blended, slightly pale, and thickened.
Sift in the cocoa powder, flour, salt, and baking powder.
Use a rubber spatula to fold the dry ingredients into the wet until just combined and no dry streaks remain. Be careful not to overmix.
In a separate small bowl, microwave the Biscoff spread for about 15-20 seconds until it’s warm and runny.
Pour the brownie batter into your prepared pan and spread it evenly. Drop chunks of the warmed Biscoff mixture all over the top of the brownie batter. Now, take your toothpick or skewer and drag it through the batter in wide, sweeping motions up, down, across to create a beautiful marble effect. Add the chocolate chips on top
Bake for 30-35 minutes. The brownies are done when the edges are set and the center has a shiny, crackly top.
Let the brownies cool in the pan set on a wire rack for at least 2 hours. I know it’s torture, but this allows them to set properly for those clean, fudgy slices. For the absolute cleanest cuts, you can chill them in the refrigerator for 30 minutes after they’ve cooled to room temperature
Use the parchment paper overhang to lift the entire brownie slab out of the pan. Place it on a cutting board and slice into 16 squares with a sharp knife.
Tips, Tricks, & Substitutions
- Room Temperature Eggs are Key: They incorporate more easily and help create that shiny, crackly top.
- Don’t Overbake: They continue to set as they cool.
- Biscoff Consistency: If your swirl layer is too thick, it won’t marble nicely. The heavy cream is essential to thin it. If it seizes up while you’re working, just re-warm it for a few seconds.
- Alternative Spreads: Don’t have Biscoff? You can use smooth peanut butter, Nutella, or any other cookie butter. The flavor will change, but the technique is the same.
- Gluten-Free Option: Use a 1:1 gluten-free flour blend and ensure your cocoa powder and Biscoff are certified GF.
- Extra Biscoff Love: For ultimate decadence, crumble 2-3 Biscoff cookies over the batter before baking, or spread a thin extra layer of Biscoff on top of the cooled brownies.
- Storage: Keep in an airtight container at room temperature for 3-4 days or in the fridge for up to a week. They also freeze beautifully for up to 3 months.
