I always thought this crispy fish pakora were too complicated to make at home, that you needed some kind of secret to get them that light and crunchy. Turns out, the secret is just a few simple ingredients and a very hot pan.

This recipe is my weeknight-friendly version. The batter comes together in minutes, and the result is a pile of irresistible, spiced bites with flaky fish inside and a crackling crust outside. They’re perfect with a cup of chai, a big squeeze of lemon, and your favorite chutney.

Kitchen Equipment You’ll Need

  • Large mixing bowls (2)
  • Whisk
  • Large, heavy-bottomed pot or Dutch oven for frying
  • Slotted spoon or spider strainer
  • Wire rack set over a baking sheet (for draining)

Ingredients

Fish & Marinade

  • 500 g boneless white fish
  • ½ cup plain yogurt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • ½ teaspoon red chili powder (or to taste)
  • ¾ teaspoon salt
  • ½ teaspoon ginger minced
  • ½ teaspoon garlic minced
  • 1 tablespoon lemon juice

Pakora Batter

  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ turmeric
  • ⅓ cup gram flour
  • 2 tablespoon rice flour
  • water

Serving

  • Lemon wedges
  • Green chutney or tamarind chutney

How to Make Crispy Fish Pakora

1. Marinate the Fish.
Pat the fish chunks very dry with paper towels. In a medium bowl, whisk together the yogurt, ginger, garlic, cumin, coriander, turmeric, chili powder, lemon juice, and salt. Add the fish pieces and gently toss to coat evenly. Cover and let marinate in the fridge for at least 15 minutes (or up to 30).

2. Make the Batter.
In a large bowl, whisk together the gram flour, rice flour, baking powder, turmeic and salt. Gradually add a bit of water water, whisking until you have a smooth, thick batter with a consistency similar to pancake batter. It should coat the back of a spoon. Don’t over-mix. Let it rest for 10 minutes.

3. Heat the Oil.
Pour oil into your heavy pot to a depth of about 2-3 inches. Heat over medium-high heat, adding a drop of batter should sizzle and rise to the surface immediately.

4. Coat & Fry.
Working in small batches, remove a few pieces of fish from the marinade, letting excess drip off. Dip each piece into the batter, ensuring it’s fully coated, and gently lower into the hot oil. Fry 4-5 pieces at a time to avoid crowding and a temperature drop.
Fry for 3-4 minutes, turning occasionally, until deeply golden brown and crispy all over.

5. Drain & Serve.
Use a slotted spoon to transfer the fried pakoras to the wire rack set over a baking sheet. This keeps them crispy (they’ll get soggy on paper towels).
Repeat with remaining fish, allowing the oil to return to temperature between batches.
Serve immediately, garnished with cilantro and lemon wedges, with chutney on the side.

Tips, Tricks, & Substitutions

  • The Right Fish: Use a firm fish that won’t fall apart easily.
  • Dry Fish is Key: Patting the fish dry before marinating is crucial. Any extra water will make the oil splatter and can make the coating soggy.
  • Maintain Oil Temperature: This is the most important step for crispiness. Don’t add too many pieces at once, and let the oil reheat between batches.
  • No Deep Fryer? A wide, heavy pot works great. Just be sure to use enough oil for the pieces to float.
