- 1 cup full-fat cottage cheese (drained if very watery)

How to Make Cottage Cheese Quesadillas
1. Cook the eggs and spinach
Heat a skillet over medium heat and add the olive oil or butter. Crack in the eggs, season lightly with salt and pepper, and scramble gently. When the eggs are mostly set but still soft, add the chopped spinach. Cook for another 30–60 seconds until the spinach wilts. Remove from heat.
2. Prepare the filling
In a bowl, mix the scrambled eggs and spinach with the cottage cheese. You don’t want it fully smooth, some texture is good. Stir in the shredded cheese last so it doesn’t melt right away.
3. Assemble the quesadillas
Lay one tortilla flat on a clean surface. Spread about ½ cup of filling evenly over one half of the tortilla, leaving a small border around the edge. Fold the tortilla over to close. Repeat with the remaining tortillas.
4. Cook the quesadillas
Wipe out the skillet and return it to medium heat. Place one or two quesadillas in the pan (depending on size). Cook for 2–3 minutes per side until the tortilla is golden brown and crisp and the cheese inside is melted. Press lightly with a spatula if needed. Repeat until all quesadillas are cooked.
5. Slice and serve
Let the quesadillas rest for a minute, then cut each one in half
Flour Tortilla Tip: For the crispiest result, use a dry skillet or griddle, but a little fat (butter/oil) gives the best flavor and golden color.
