1 tsp. chilli flakes
4 roasted red peppers drained and sliced
300 g broccoli, halved
8 eggs, beaten
4 tbs. whole milk
handful of basil leaves
Salt to taste
Fresh ground black pepper
How To Prepare Broccoli With Pepper Frittata
- Heat the oven to 180 degrees, lay the peppers on a baking tray and roast for 30 minutes or until the skin is shriveled and blistered.
- Boil water in a sauce pan and blanch the broccoli for 3 minutes and then drain.
- Heat the oil in an ovenproof pan and add the chilli flakes, peppers and broccoli and cook for a few minutes.
- Whisk the eggs and milk together and season well.
- Add the egg mixture to the pan, pulling in the sides with a wooden spoon until the edges start to set.
- Scatter over the basil, and put the pan under a hot grill for 6 minutes or until puffed, golden brown and the eggs have set. Serve with salad
