Ingredients For Preparing Broccoli With Pepper Frittata

2 tbs. olive oil

1 tsp. chilli flakes

4 roasted red peppers drained and sliced

300 g broccoli, halved

8 eggs, beaten

4 tbs. whole milk

handful of basil leaves

Salt to taste

Fresh ground black pepper

How To Prepare Broccoli With Pepper Frittata

  1. Heat the oven to 180 degrees, lay the peppers on a baking tray and roast for 30 minutes or until the skin is shriveled and blistered.
  2. Boil water in a sauce pan and blanch the broccoli for 3 minutes and then drain.
  3. Heat the oil in an ovenproof pan and add the chilli flakes, peppers and broccoli and cook for a few minutes.
  4. Whisk the eggs and milk together and season well.
  5. Add the egg mixture to the pan, pulling in the sides with a wooden spoon until the edges start to set.
  6. Scatter over the basil, and put the pan under a hot grill for 6 minutes or until puffed, golden brown and the eggs have set. Serve with salad
