Ingredients

240 g buckwheat flour

100 g rice flour

1 tsp. salt

1 tsp. gluten free baking powder

½ tsp. ground cumin

1 tbs. chopped fresh coriander

200 ml water

2 tbs. olive oil

How to prepare Buckwheat Flat Bread

  1. Sift together the buckwheat flour, rice flour, salt, baking powder and cumin into a large bowl and make a well in the centre.
  2. Add the coriander, water and oil and stir into the dry ingredients to make a soft dough.
  3. Divide the dough into four pieces and shape each piece into a smooth ball. Roll out each ball on slightly floured work surface to a 20 cm round.
  4. Preheat a heavy pan to hot. Add the flatbreads and cook for about 1 minute on each side, or until firm and golden brown. Serve warm.
