3 cups cooked chicken, shredded or chopped
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 celery stalk, chopped
1/4 red onion, finely chopped
1/4 cup chopped parsley
Salt to taste
Black pepper to taste
Add the cooked chicken, celery, red onion, and parsley to a large mixing bowl.
In a smaller bowl, mix together the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
Pour the dressing over the chicken mixture and stir until everything is evenly coated.
Taste and adjust the seasoning if needed.
Cover and chill for about 20 minutes before serving if you want the flavors to come together a bit more.
Serve in sandwiches, wraps, lettuce cups, or however you like.
Try not to overmix the salad because the chicken can break down too much and turn mushy.
Rotisserie chicken works really well here and saves a lot of time.
