Avocado Sauce

  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1/2 large avocado
  • 1/2 teaspoon garlic powder
  • 1 tablespoon chives, finely chopped
  • 2 tablespoon cilantro, finely chopped
  • 1/2 jalapeño, chopped

For Serving

  • 1 cup romaine, finely shredded
  • 2 green onions, finely chopped
  • 1 cup salsa

How to Make Fried Chicken Tacos

Start by heating your oven to 400°F and lining a baking sheet with parchment paper so the tacos don’t stick.

In a non-stick pan heat the olive oil, then add the corn, shredded chicken, and taco seasoning. Cook for about 2 to 3 minutes until everything is warmed through.

Add the cream cheese and continue cooking for another 1 to 2 minutes until it melts and mixes into the chicken. If the mixture feels too thick, add a small splash of water to loosen it. Remove from heat and set aside.

In a clean pan lightly spray with oil. Warm each tortilla one at a time for about 1 minute per side, adding a little more oil between each tortilla so they don’t stick. Keep the warmed tortillas covered with a damp towel so they stay soft.

To assemble the tacos, spoon some of the chicken mixture onto one half of each tortilla. Sprinkle both cheeses on top, then fold the tortilla over and gently press it closed.

Place the tacos on the prepared baking sheet and bake for about 15 minutes, flipping halfway through so both sides turn golden and the cheese melts.

While the tacos are baking, add all the avocado sauce ingredients to a blender and blend until smooth.

Once the tacos are done, remove them from the oven and fill them with shredded romaine, green onions, salsa, and a drizzle of the avocado sauce. Serve extra sauce on the side if you like
