Feta With Chorizo Quesadillas are an amazing delicacy which originated from Mexico made by filling a tortilla with cheese and sometimes other ingredients like sausages, beans and veggies of your choice.

The tortilla is folded in half and pan cooked until the cheese melts and tortillas are crispy. You can serve with different toppings and side dishes such as guacamole, sour cream or even salsa.

Ingredients For Making Feta With Chorizo Quesadillas

4 corn tortillas

120 g feta, crumbled

120 g chorizo, chopped into small pieces

3 plum tomatoes, diced

3 spring onions chopped

1 lime, juice extracted

Small bunch coriander, leaves copped

5 pickled jalapeno slices finely chopped

Salt to taste

1/4 tsp. black pepper

How To Prepare Feta With Chorizo Quesadillas

  1. Mix the tomatoes, spring onions and coriander in a bowl and season. Scoop out 3 tablespoons of the mixture and set aside, then mix the rest with the jalapenos and lime juice to make a salsa.
  2. To make the quesadillas, heat a large frying pan and put a tortilla on the bottom. Sprinkle over the feta, chorizo and the reserved tomato mixture, then top with another tortilla.
  3. Cook until the bottom is golden and the cheese has started to melt as you press down with a spatula to get the tortilla to stick.
  4. Flip the quesadilla over very carefully and brown the other side. Repeat with the remaining ingredients and tortillas. Cut into wedges and serve the salsa.
