Ingredients Needed For Making Jewel Salad

2 carrots cut into julienne shapes

2 large tomatoes, deseeded and cubed

1 yellow bell pepper, deseeded and cut into julienne shapes

10 red radishes washed properly and sliced

1 small red onion peeled and sliced

Small handful coriander leaves, chopped

1 lemon, juice extracted

1 lemon zest

4 tbsp. olive oil

1/2 tsp. salt

1/2 tsp. black pepper powder

Small handful mint leaves, chopped

1 cucumber cut into small slices

For The Dressing

125 ml coconut milk

100 g unsalted cashew nuts, soaked in water for 2 hours, grained

1 tbsp. cider vinegar

1 garlic clove, crushed

1/2 tsp. salt

2 spring onions, finely chopped

2 tbsp. fresh coriander, chopped

How To Prepare Jewel Salad

  1. For the dressing, soak the nuts, vinegar, 50 ml of the coconut milk. garlic and salt in a blender and blend to a smooth paste.
  2. Add the remaining coconut milk until the mixture is fairly thick. The consistency should be pouring.
  3. Stir in the spring onions and coriander.
  4. To make the salad, put the carrots, tomatoes, bell pepper, radishes, onions, coriander, lemon zest, salt, mint leaves and cucumber in a serving platter.
  5. Pour over the lemon juice, salt, oil and black pepper over the vegetables and mix well to coat everything well.
  6. Stir in all the dressing, mix well and serve.
