One Pot Jambalaya

One Pot Jambalaya pinit

I started making one pot jambalaya because I wanted something filling and packed with flavor without using every pan in the kitchen afterward. Some dinners taste amazing but leave you staring at a sink full of dishes afterward, and honestly I was not in the mood for that. This recipe fixes both problems.

The rice cooks right in the same pot with the sausage, chicken, shrimp, and seasonings, so all the flavors mix together properly instead of tasting separate. It’s hearty, a little spicy, and one of those meals that somehow tastes even better the next day. If you already enjoy recipes like Coconut Meatball Curry, Ground Beef Bowl, or Chicken Alfredo Pasta, this one pot jambalaya fits perfectly into that easy homemade dinner rotation.

Why You Will Love This One Pot Jambalaya

What I love most about this recipe is how much flavor you get without needing complicated steps. Everything cooks together in one pot, which honestly makes dinner feel way easier.

The mix of chicken, sausage, shrimp, rice, and seasonings also keeps the meal really filling without needing extra side dishes.

Another thing I like is that you can adjust the spice level pretty easily depending on what you prefer.

The leftovers are also ridiculously good because the rice keeps soaking up flavor overnight.

What You Will Need For One Pot Jambalaya

A large Dutch oven or deep pot works best because everything cooks together in the same pan without overflowing.

You’ll also need a sharp knife for chopping the vegetables and slicing the sausage evenly.

A wooden spoon helps with stirring the rice properly while scraping the flavorful bits from the bottom of the pot.

If you want extra easy prep, measuring out all the spices before starting honestly helps a lot.

Ingredients Needed

  • 1 tablespoon olive oil
  • 12 ounces smoked sausage, sliced
  • 1 pound chicken breast, cubed
  • ½ pound shrimp, peeled and deveined
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon thyme
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup crushed tomatoes
  • 2 cups chicken broth
  • 1 cup long grain rice
  • 2 tablespoons chopped parsley

How To Make The Jambalaya

Heat olive oil in a large pot over medium heat.

Add the sliced sausage and cook until browned around the edges.

Add the chicken and cook for several minutes until lightly browned.

Stir in the onion, bell pepper, and celery. Cook until softened.

Add the garlic, paprika, Cajun seasoning, thyme, black pepper, and salt. Stir for about 30 seconds until fragrant.

Pour in the crushed tomatoes and chicken broth.

Stir in the rice and bring everything to a gentle simmer.

Cover and cook for about 20 minutes, stirring occasionally, until the rice becomes tender.

Add the shrimp during the last few minutes of cooking and stir until pink and fully cooked.

Sprinkle chopped parsley over the top before serving.

I usually add extra hot sauce at the table because I like a little more heat honestly. This jambalaya also goes really well with Buttermilk Cornbread Muffins, Strawberry Sweet Iced Tea, or even Pineapple Ginger Iced Tea if you want something refreshing on the side.

Tips For One Pot Jambalaya

Long grain rice works best because it holds its texture better while cooking in the broth.

Try not to overcook the shrimp because they cook really quickly once added to the pot.

If the rice starts looking dry before fully cooked, add a small splash of broth near the end.

Smoked sausage gives the best flavor here compared to plain sausage honestly.
