Ingredients For Making Smoked Chicken Fritters

4 pieces chicken breasts

5 large potatoes, peeled and chopped

1 cup breadcrumbs

2 onions finely chopped

1 small bunch fresh coriander, chopped

2 egg, lightly beaten

30 g all purpose wheat flour

1/2 tsp. ground pepper

Cooking oil

2 tsp. paprika powder

For the sauce

2 tomatoes, chopped

2 clove garlic, crushed

50 ml sweet chilli sauce

50 ml olive oil

2 tbsp. white wine vinegar

How To Prepare Smoked Chicken Fritters

  1. Mix 2 tablespoons of water, salt, sugar and paprika and soak the chicken thighs for 30 minutes or more.
  2. Put the chicken thighs on individual skewers.
  3. To smoke the chicken, light a wooden small born fire, place a mesh and place the meat skewers on the mesh and smoke the chicken thighs turning the skewers occasionally on all sides until all the juices have dried out and the chicken is no longer pink and its cooked through.
  4. Put the smoked chicken aside, on a warm place.
  5. To make the sauce, place tomatoes, garlic, chilli sauce and olive oil and vinegar in a food processor or blender and process until smooth. Set aside.
  6. Boil the potatoes until tender. Drain potatoes and place them in a blender, add the chicken, bread crumbs, onions and coriander and process until smooth. Add the eggs, flour and black pepper to taste and process for 20 seconds or until just combined.
  7. Heat oil in a clean sauce pan over medium heat, drop tablespoons of the mixture into hot oil and cook for 2 minutes or until golden. Drain and serve with sauce.
