Three Cheese Baked Gnocchi with Spinach became one of my favorite easy dinners after I needed to use a package of gnocchi and some spinach sitting in the refrigerator. How to Make Three Cheese Baked Gnocchi with Spinach

First, preheat the oven to 375°F and lightly grease a medium baking dish.

Meanwhile, bring a pot of salted water to a boil. Add the gnocchi and cook according to the package directions. Once the gnocchi float to the surface, drain them and set them aside.

Next, melt the butter in a large skillet over medium heat. Add the garlic and cook for about 30 seconds, stirring frequently so it doesn’t burn.

After that, add the fresh spinach. Continue stirring for about 2 minutes until the spinach wilts and reduces in volume.

Then, pour in the heavy cream and add the Italian seasoning, nutmeg, salt, and black pepper. Stir everything together and let the sauce gently simmer for 2 to 3 minutes.

Once the sauce begins to thicken slightly, reduce the heat. Add the ricotta and half of the Parmesan, then stir until the cheeses blend into the sauce.

Next, add the cooked gnocchi to the skillet and gently stir until the sauce coats each piece.

Transfer the gnocchi mixture to the prepared baking dish. Afterward, sprinkle the mozzarella and remaining Parmesan evenly over the top.

Place the dish in the oven and bake for about 15 to 20 minutes. During this time, the sauce will continue to thicken while the cheese melts.

For an extra golden top, switch the oven to broil for the final 1 to 2 minutes. However, keep a close eye on it because the cheese can brown quickly.

Finally, remove the baked gnocchi from the oven and let it rest for about 5 minutes. Then, garnish with fresh parsley or basil, extra Parmesan, and crushed red pepper flakes if desired.

Tips for the Best Baked Gnocchi

For starters, don’t overcook the gnocchi before baking. Since it continues cooking in the oven, boiling it just until it floats helps keep the texture soft without becoming mushy.

Additionally, freshly grated Parmesan melts more smoothly into the sauce than pre-shredded varieties. Therefore, it’s worth grating it yourself if you have a few extra minutes.

Meanwhile, add the spinach gradually if your skillet isn’t large enough to hold it all at once. As each handful wilts, you’ll have more room for the rest.

Finally, let the baked gnocchi rest for a few minutes before serving. As it sits, the creamy cheese sauce thickens slightly and coats the gnocchi even better.

Easy Variations

If you want to make the dish more filling, add some cooked chicken before transferring everything to the baking dish. For instance, leftover rotisserie chicken works particularly well and saves preparation time. What to Serve With Three Cheese Baked Gnocchi with Spinach

Because this baked gnocchi is creamy and filling, I like to pair it with something lighter on the side. For example, Armenian Salad adds plenty of fresh vegetables, while Mixed Cucumber Salad provides a crisp contrast to the cheesy sauce.

How to Store and Reheat
